Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 8 small corn tortillas
- Toppings: avocado slices, chopped cilantro, lime wedges, salsa
Instructions:
- Preheat the oven to 400°F (200°C). Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender.
- Warm black beans in a saucepan over low heat.
- Warm tortillas in a dry skillet or oven.
- Assemble tacos with sweet potatoes, black beans, and desired toppings. Serve with lime wedges and salsa.
